Peri Peri Chicken Rolls Recipe

ISLAMABAD: Peri Peri Chicken Rolls are a flavorful and spicy twist on classic chicken rolls. Made with tender chicken cubes seasoned with peri-peri spices, they’re a delightful meal for both adults and kids.

Ingredients:

For the Chicken:

  • 500 grams boneless chicken
  • Salt (to taste)
  • 1 tsp garlic powder
  • 1 tsp paprika powder
  • 1 tsp black pepper powder
  • 2 tbsp oil
  • 1 tsp vinegar
  • 1 tsp soy sauce
  • 3 tbsp peri peri sauce
  • Peri peri seasoning (optional)

For the Parathas:

  • 1 ½ tsp all-purpose flour
  • Water (as needed)

For Assembling:

  • 2 tomatoes, thinly sliced
  • 1 onion, sliced
  • 1 capsicum, sliced
  • ½ cup boiled sweet corn
  • Mayonnaise
  • Ketchup

Instructions:

  1. In a bowl, combine the all-purpose flour with a pinch of salt. Gradually add water and knead into a dough. Let it rest for 30 minutes.
  2. In another bowl, marinate the chicken with salt, garlic powder, paprika, black pepper, oil, vinegar, soy sauce, and peri-peri sauce. Set aside for 30 minutes.
  3. Roll small balls from the dough and flatten them into parathas, frying until they are cooked and crisp.
  4. In a pan, cook the marinated chicken until tender and fully infused with the seasoning. If you want extra spice, add peri-peri seasoning at this stage. Allow it to cool.
  5. Take the cooked parathas and spread mayonnaise and ketchup on them. Layer with lettuce, tomatoes, onions, capsicum, and sweet corn. Add the cooked chicken, then roll everything tightly and secure with a toothpick. Your peri peri chicken rolls are now ready to serve.
