ISLAMABAD: There is nothing more satisfying than layers of wafer with chocolate mousse. Try this incredibly sweet and chocolaty Wafer Cake to brighten your day.
Ingredients:
- 1 cup chocolate chips
- 1 cup cream
- 1 cup milk
- 1 ½ tbsp gelatin
- 2 cups milk
- 3 tbsp cornstarch
- ⅓ cup sugar
- 2 eggs (lightly beaten)
- 1 tsp vanilla essence
- Chocolate wafers as needed
- Caramel sauce for topping
- Peanuts for garnish
Instructions:
- In a bowl, melt the chocolate chips. Add the milk and gelatin, mixing well.
- In another bowl, combine the whipped cream and chocolate milk mixture.
- In a pan, whisk together the milk, sugar, and cornstarch over medium-low heat until thickened, whisking continuously to avoid lumps.
- Remove from heat, add 2 tablespoons of the mixture to the beaten eggs and mix well. Return the egg mixture to the pan and cook on low flame for 3-4 minutes while whisking. Remove from heat, add vanilla essence, and whisk until well combined. Let it cool to room temperature.
- In a dish, layer chocolate wafers and pour chocolate mousse on top. Refrigerate for 30 minutes.
- Add another layer of chocolate wafers and pour the vanilla custard on top. Refrigerate for another 30 minutes.
- Add a final layer of chocolate wafers and refrigerate for 10-20 minutes before serving.
- Top with additional wafers, caramel sauce, and serve chilled.
