ISLAMABAD: This simple recipe features soya chunks, bananas, and boiled potatoes.
Ingredients:
- 2 cups boiled soya chunks
- 2 raw bananas
- 1/2 boiled potato
- 2 green chillies
- 1 tsp ginger-garlic paste
- 1 tsp coriander powder
- 1 tbsp garam masala
- 1/2 tsp turmeric powder
- 1/2 tsp cumin powder
- 1 tsp black pepper powder
- Salt, to taste
- 3 tbsp lemon juice
- 4 tbsp oil
For coating:
- 1 ½ cups sooji (semolina)
- 2 cups rice flour
- 1 tbsp chilli powder
- Salt, to taste
Instructions:
- In a blender, combine the boiled soya chunks, ginger-garlic paste, and green chilies. Blend until the mixture is crumbly and well combined, then transfer it to a plate.
- Next, mash the raw peeled bananas and boiled potato together with the soya chunk mixture. Add the spices—coriander powder, garam masala, turmeric powder, cumin powder, black pepper powder, and salt—and mix thoroughly.
- With dry hands, take a small portion of the mixture and shape it like a fish, making a small hole in the center. Repeat with the remaining mixture.
- On a separate plate, mix the sooji, rice flour, chili powder, and salt. Lightly oil the fish-shaped cutlets and coat them in the sooji mixture.
- Heat oil in a pan. Once hot, carefully place the coated cutlets in the pan. Avoid touching them for about a minute to prevent disintegration.
- After a minute, gently flip the cutlets to cook evenly on both sides, continuing until they are golden brown and crisp.
- Garnish with chopped coriander and mint leaves. Your Veg Fish Fry is now ready to serve!
