ISLAMABAD: This easy and flavorful recipe is perfect for a quick lunch or dinner; these delicious quesadillas are best served with a side of tomato salsa.
Ingredients:
1 small barbecued chicken
Olive oil cooking spray
8 burrito tortillas
250g Bulla Cottage Cheese
1 small red capsicum (chopped)
1 small green capsicum (chopped)
1/3 cup coriander leaves
310g can creamed corn
Tomato salsa, for serving
Instructions:
Remove the skin and meat from the chicken. Discard the skin and bones, then shred the meat.
Preheat a sandwich press. Lightly spray one side of 4 tortillas with oil and place them oil-side down on a flat surface.
Spread cottage cheese evenly over the tortillas. Add the shredded chicken, chopped capsicum, and coriander leaves. Season with salt and pepper. Spread creamed corn over the remaining 4 tortillas, then place them, corn-side down, on top of the chicken mixture. Spray the tops with oil.
Cook the tortillas in the sandwich press one at a time (cut in half if needed) for four minutes or until crisp. Cut into pieces and serve with tomato salsa.
