ISLAMABAD: This ragi paratha is a beloved dish known for its earthy flavour. To enhance its taste, consider adding onions, green chillies, and a few spices.
Ingredients:
1 cup ragi flour
1/2 cup wheat flour
1/4 cup finely chopped onions
1/4 cup finely chopped coriander leaves
1-2 green chillies, finely chopped
Salt to taste
Ghee or oil for roasting
Instructions:
In a bowl, mix ragi flour and wheat flour. Add salt and mix well.
Then add water and knead the mixture into a smooth, pliable dough.
Incorporate the finely chopped onions, coriander leaves, green chillies, and cumin seeds into the dough.
Knead the dough again to ensure that all ingredients are evenly distributed.
Divide the dough into small, equal portions. Shape each portion into a ball and flatten.
Roll out each portion into a thin, round paratha, using some dry flour to prevent sticking.
Heat a griddle over medium-high heat.
Once hot, place the rolled-out paratha on the griddle.
After about 30 seconds, flip the paratha to cook the other side.
Add a little ghee to make paratha crispy.
Cook until both sides are nicely browned and crispy, then remove from the heat.
Your ragi paratha is now ready to serve.
