ISLAMABAD: Tender potatoes are transformed into a dough and filled with a flavourful mixture of dates, tamarind pulp, and fennel seeds, then deep-fried to perfection.
Ingredients:
3 medium potatoes (peeled, boiled, and mashed)
250 grams arrowroot powder
1 tsp lemon juice
1 tsp salt
2 tbsp ghee
For the Filling:
150 grams dates (pitted)
4 tbsp thick tamarind pulp
1 tsp chili powder
1 tsp rock salt
1 tsp sugar
1 tsp roasted ground fennel seeds
Instructions:
Combine the mashed potatoes, arrowroot powder, lemon juice, salt, and ghee to form a firm dough.
Roll the dough into small discs.
Place the filling in the center and press two discs together to seal.
Next, blend all filling ingredients together. Fill the puris with the mixture and deep-fry in hot oil until golden brown.
Serve hot with your choice of veggies.
