ISLAMABAD: As summer break ends and school begins, kids swap their carefree days for classrooms and freshly packed lunch boxes. Following are super quick recipes that will save your time and provide the best to your kids.

Ingredients for Crepe Cake:

  • 3 Eggs
  • 1 cup Milk
  • 1/2 tsp Vanilla essence
  • 1 cup All-purpose flour
  • 1/2 cup Icing sugar
  • 1 tbsp Baking powder
  • 1 tbsp Oil
  • Melted chocolate, as needed

Ingredients for Chicken Spread Sandwich:

  • 2 cups Boiled & shredded chicken
  • 1 cup Mayonnaise
  • 1/4 cup Ketchup
  • 1 tsp Garlic powder
  • 1/2 tsp Salt
  • 1 tsp Black pepper powder
  • Bread slices, as needed
  • Ketchup, as needed
  • Iceberg lettuce, as needed
  • Tomato slices, as needed

Ingredients for Assembling:

  • Prepared crepe cake
  • Prepared sandwich
  • Grapes, as needed
  • Bananas, as needed

Instructions:

  1. In a bowl, combine eggs, milk, vanilla essence, flour, icing sugar, baking powder, and oil. Mix well.
  2. Pour 1/4 cup of the batter onto a preheated pan, cooking each side for 1-2 minutes.
  3. Once the crepes are ready, spread melted chocolate on one crepe and stack another crepe on top. Repeat this until the desired layers are achieved. Your Crepe Cakes are ready.
  4. For the chicken spread, mix boiled chicken, mayonnaise, ketchup, garlic powder, salt, and black pepper in a bowl.
  5. Transfer the chicken spread to a bowl, cover it with cling film, and refrigerate (it can be stored for up to 2 weeks).
  6. To assemble the sandwich, spread the chicken mixture on a bread slice, place another slice on top, and spread ketchup over it.
  7. Add iceberg lettuce and tomato slices, then top with another slice of bread. Trim the edges and cut the sandwich into 4 parts.
  8. Finally, pack the lunch box with grapes, bananas, crepe cakes, and sandwiches.
  9. Your lunch box is ready!
