ISLAMABAD: Food essences, which are added to food in order to maintain flavors and appearance, are linked with an increased risk of type 2 diabetes, a new research study has revealed.
A study published in the journal PLOS Medicine stated that nitrates are chemical compounds used as additives in food to increase shelf life. However, researchers recommend an association between nutritional exposure to nitrites and the risk of diabetes.

To explore the relationship between dietary exposure to nitrites and nitrates type 2 diabetes risk, scholars accessed data taken from more than 1,04,168 participants in the prospective cohort NutriNet-Sante.
They analyzed self-reported diet details with health results using detailed nitrite and nitrate exposure derived from several databases.
“These findings provide new evidence in the context of current discussions about the need for a decrease of nitrite additives’ use in processed foods by the food sector, and could support the need for better rules and regulation of soil contamination by fertilizers,” the study added.
