ISLAMABAD: Dehi Phulki is a traditional Pakistani street food that is an essential part of the Iftar table in every household. It is essentially a hollow and crispy sphere made from chickpea flour (besan) batter.

Here is a simple recipe for preparing at home for Iftaar.
Ingredients:
1 cup chickpea flour (besan), 1/4 teaspoon baking soda, 1/2 teaspoon salt (adjust to taste), 1/2 teaspoon red chili powder, 1/2 teaspoon cumin seeds, 1 green chili, oil for deep frying, tamarind chutney or green chutney, for serving, yogurt, chaat masala, chopped onions, boiled potatoes.
Instructions:
- Combine chickpea flour, baking soda, salt, red chili powder, and cumin seeds in a mixing bowl.
- Gradually add water to the dry ingredients to form a thick batter.
- Heat oil in a deep-frying pan, when the oil is hot, reduce the heat to medium-low.
- Using a spoon or your hands, drop small portions of the batter into the hot oil. Fry the batter in batches.
- Fry the phulkis until they turn golden brown and crispy.
- Once fried, remove the phulkis from the oil and drain them on paper towels to remove excess oil.
- Put the phulkis in salted water for 5 minutes
- In a separate mixing bowl, add beaten yogurt, phulkis, boiled potatoes, chopped onion, chaat masala, and tamarind chutney or green chutney.
