This healthy curried lentil soup is filling and has a depth of flavor through coconut yogurt and curry spices.
Ingredients to prepare lentil soup
2 splashes vegetable oil
300g red lentils
3-4 tbsp korma curry paste
1.2 liters hot vegetable stock
1 onion, chopped
100g kale, shredded finely
2 garlic cloves, well sliced
40g blanched almonds, finely cut
2 tbsp dried curry leaves powder
4 tbsp coconut yogurt
1 red chili sliced
Fresh coriander at serving

Ingredients to prepare lentil soup
Prior to cooking, heat the oven to 200°C. Pour few drops of oil, curry paste, the lentils, and stock into an ovenproof pot with a covering lid and stir. Cover and then for 40 minutes cook in the oven.
Heat few more drops of oil in a frying pan over a slightly high heat and fry the kale, garlic onion, and almonds for 3-4 minutes until they turn golden and a little charred. Stir in the leaves of curry after which cook for 1 minute.
Top with drops of yogurt, the kale mixture, chili and coriander to serve.
