ISLAMABAD: Cucumber Curd Rice is quick to prepare and a healthy dish. You can whip up this refreshing cucumber curd rice recipe in just 15 minutes using minimal ingredients.
Ingredients
- 1 cup cooked rice
- 1 cup yogurt
- ½ cup grated cucumber
- 1 tbsp curry leaves
- 1-2 tbsp green chilies, chopped
- Chopped coriander leaves
- 2-3 tbsp pomegranate seeds
- 2 tbsp peanuts
- 1 tsp black pepper powder
- 1 tsp cumin seeds
- ½ tsp asafoetida (hing)
- 1-2 tsp ghee
- Salt, to taste
Instructions
- Start by grating the cucumber and set it aside.
- In a bowl, whisk the yogurt until smooth, then add the grated cucumber.
- Mix in the salt, black pepper, and chopped coriander.
- Add the cooked rice to the cucumber and yogurt mixture and stir well.
- In a hot pan, heat the ghee and sauté the cumin seeds, asafoetida, green chilies, curry leaves, and peanuts for about a minute.
- Pour the tempering over the cucumber curd rice mixture and mix thoroughly.
- For an extra chill, refrigerate for 10-15 minutes before serving.
