Cucumber Curd Rice Recipe

ISLAMABAD: Cucumber Curd Rice is quick to prepare and a healthy dish. You can whip up this refreshing cucumber curd rice recipe in just 15 minutes using minimal ingredients.

Ingredients

  • 1 cup cooked rice
  • 1 cup yogurt
  • ½ cup grated cucumber
  • 1 tbsp curry leaves
  • 1-2 tbsp green chilies, chopped
  • Chopped coriander leaves
  • 2-3 tbsp pomegranate seeds
  • 2 tbsp peanuts
  • 1 tsp black pepper powder
  • 1 tsp cumin seeds
  • ½ tsp asafoetida (hing)
  • 1-2 tsp ghee
  • Salt, to taste

Instructions

  1. Start by grating the cucumber and set it aside.
  2. In a bowl, whisk the yogurt until smooth, then add the grated cucumber.
  3. Mix in the salt, black pepper, and chopped coriander.
  4. Add the cooked rice to the cucumber and yogurt mixture and stir well.
  5. In a hot pan, heat the ghee and sauté the cumin seeds, asafoetida, green chilies, curry leaves, and peanuts for about a minute.
  6. Pour the tempering over the cucumber curd rice mixture and mix thoroughly.
  7. For an extra chill, refrigerate for 10-15 minutes before serving.
