Ingredients
For Dough:
All-purpose flour: 550 g / ½ cup
Yeast: 20 g
Sugar: 60 g / 1/4 cup
Salt: 1 tsp
Milk: 140 g / 3/4 cup
Water: 115 g
Butter: 100 g
Butter: 250 g (room temperature)
For Custard Cream:
Sugar: 100 g
Custard slurry (custard powder 50 g + milk 1/2 cup)
Dairy Cream: 1 cup
For Chocolate Ganache:
Dairy Cream: 1 cup
Dark chocolate: 1/2 cup
For Croissants:
Prepared dough
Prepared chocolate ganache
Prepared custard cream
Melted chocolate
Chopped almonds (as needed)
Instructions
In a bowl, combine flour, salt, yeast, and sugar. Mix well. Add butter and mix again. Next, add water and knead the mixture into a smooth dough. Wrap the dough and allow it to rest until it doubles in size.
Place 250 g of butter in a zip lock bag and flatten it with a rolling pin. Freeze.
In a pot, heat milk and add sugar. Cook until the sugar dissolves. Add custard slurry and cook until thickened. Stir in dairy cream and set aside.
In a bowl, microwave dairy cream for a minute, then add dark chocolate. Mix until melted and smooth. Set aside.
Roll out the prepared dough and place the frozen butter on it. Wrap the dough around the butter and trim the edges.
Flatten the dough with a rolling pin into a square shape. Sprinkle with flour while rolling. Refrigerate for 30 minutes and repeat the rolling process twice more.
Roll out the dough again, trim the edges, and cut it into strips.
Roll the strips into a Swiss roll shape, place them on a greased baking pan, and bake in a preheated oven at 170-180°C for 15-20 minutes, flipping the croissants every 5 minutes.
Make a hole in each croissant and fill it with custard cream and chocolate ganache. Top with additional chocolate ganache, melted chocolate, and chopped almonds. Enjoy your homemade Chocolate Vanilla Croissants.
