ISLAMABAD: Chicken Fajita Traybake is a delicious dish that would make everyone happy. The ingredients of the dish include chicken along with vegetables to make the flavors really strong.

Ingredients
700 g skinless boneless chicken thighs, cut into 2cm strips
1 red pepper, cut into small strips
1 yellow pepper, cut into small strips
2 medium sweet potatoes, about 600g, cut into small chunks
2 red onions, cut into wedges
1 1/2 tbsp. chipotle paste
2 tsp. smoked paprika
2 tsp. ground cumin
2 tbsp. vegetable oil
8 tortilla wraps
150 ml sour cream
100 g cheddar cheese
2 limes, cut into wedges
Directions
Step 1
Preheat the oven to 220ºC (200ºC fan) then put chicken, sweet potatoes, onions and peppers in wide baking tray. Add chipotle paste, paprika, cumin, oil and season it with salt and pepper. Mix everything together until it is all coated well.
Step 2
Roast the oven for 50-55 minutes until everything is golden brown and cooked through.
Step 3
Then serve it with, warm tortillas along with the fajita mixture, sour cream, cheddar, tomato salsa and lime wedges.
