Ingredients:

For Chicken Preparation:

Chicken fillets: 3-4

Chilli sauce: 2 tbsp

Garlic powder: 1 tsp

Black pepper powder: 1 tsp

Mustard paste: 1 tbsp

Red chilli flakes: 1 tbsp

Salt: 1/2 tsp

Oil: as required

For Chicken Mixture:

Salt: 1 tsp

Black pepper powder: 1 tsp

Prepared chicken

Jalapenos (chopped): as required

For Salsa Preparation:

Onion (chopped): 1 cup

Tomato (chopped): 1 cup

Sweet corn: 1 cup

Capsicum (chopped): 1 cup

Tomato ketchup: 1/2 cup

Green coriander (chopped): 1/2 cup

Mixed herbs: 1 tsp

Salt: 1/2 tsp

Crushed black pepper: 1 tsp

Vinegar: 1 tbsp

For Mexican Rice:

Oil: 3 tbsp

Garlic (chopped): 1 tbsp

Tomato puree: 1 cup

Red chilli powder: 1 tbsp

Salt: 1 tbsp

Paprika powder: 1 tbsp

Red chilli flakes: 1 tbsp

Water: 4 cups

Soaked rice: 2 cups

Directions:

In a bowl, mix the chicken fillets with chili sauce, garlic powder, black pepper powder, mustard paste, red chili flakes, and salt.

Heat oil in a pan and shallow fry the marinated chicken fillets for 1-2 minutes on each side, until 80% cooked. Cut the chicken into chunks and set aside.

In another pan, heat oil and sauté onion for a minute. Add tomato puree, salt, black pepper powder, and cook for 1-2 minutes.

Add the prepared chicken and chopped jalapenos to the pan, cooking for an additional 1-2 minutes. Set aside.

In a bowl, combine the chopped onion, tomato, sweet corn, capsicum, tomato ketchup, green coriander, mixed herbs, salt, crushed black pepper, and vinegar to prepare the salsa.

To make Mexican rice, heat oil in a pot and sauté the chopped garlic for a minute. Add tomato puree, red chili powder, salt, paprika powder, and red chili flakes, cooking briefly.

Pour in water and bring to a simmer. Add the soaked rice and cook until 80% of the water evaporates. Cover and steam over low heat for 10-12 minutes. Set aside.

To assemble the burrito, take a tortilla wrap and layer the Mexican rice, salsa, and prepared chicken in the center.

Wrap it tightly and toast the burrito for 1-2 minutes.

Your Chicken Burrito is ready to serve.
