Ingredients
For Soaked Rice
1 cup rice
Water (for soaking) as required
For Caramel Syrup Preparation
400 g sugar
1/4 cup water
For Creamy Kheer
2 liters milk
Caramel syrup
1/2 cup almonds
1/4 cup pistachios
Instructions
In a bowl, add rice and water. Mix well and soak for 30 minutes.
Drain the water from the rice and break the rice into small pieces with your hands. Set aside.
In a pan, heat the sugar and cook until it melts. Add water and mix well. Set aside.
In a pot, heat the milk and add the soaked rice. Cook for 15-20 minutes.
Gradually add the caramel syrup and mix well. Cook until the kheer thickens and is fully done.
In a separate preheated pan, roast the almonds and pistachios for 1-2 minutes.
Add the roasted nuts into the kheer and mix well.
Dish out the kheer and garnish with almonds and pistachios. Your Creamy Kheer is ready to serve.
