Butterfly Chicken Recipe

ISLAMABAD: This chicken appetizer is simple to prepare and requires just a few pantry staples.

Ingredients:

800 g boneless chicken

3 medium potatoes, thinly sliced

2 eggs, whisked

2 tbsp ginger garlic paste

2 tsp vinegar

1 tsp red chili powder

1 tsp chaat masala

1 ½ tsp soy sauce

1 tbsp red chili paste

Black salt and regular salt, to taste

1 tbsp black pepper

2 tbsp lemon juice

3 tbsp corn flour

3 tbsp all-purpose flour (maida)

Sesame seeds

Oil for frying

Instructions:

In a large bowl, combine chicken pieces with ginger garlic paste, red chili powder, chaat masala, salt, and black pepper. Add eggs, soy sauce, red chili paste, vinegar, corn flour, and maida. Mix thoroughly to coat the chicken. Cover and let marinate for 3-4 hours.

Slice the potatoes thinly and rinse them. In a bowl, mix 2 tablespoons of corn flour with water to create a slurry. Soak the potato slices in the slurry for 10 minutes.

Take a soaked potato slice, place some marinated chicken in the center, fold it over, and secure with a toothpick. Repeat with the remaining chicken and potato slices.

Heat oil or ghee in a frying pan over high heat. Once hot, lower the flame and gently add the butterfly chicken. Deep fry until golden and crispy. Garnish with sesame seeds.
