Method to Make Pista Kulfi

- Allow the milk to simmer until its volume is reduced to about half. This process may take approximately 30-40 minutes. Keep stirring the milk to prevent it from sticking to the bottom of the pan.
- As the milk thickens, its color will change to a beige-cream shade, and most of the bubbles will appear in the center of the pan.
- Add the sugar and saffron strands to the thickened milk. Bring it to a boil again and simmer for an additional minute or two, allowing the flavors to infuse.
- Crush the green cardamom pods to release their aroma and add them to the milk mixture. Stir well.
- Remove the pan from the heat and let the mixture cool down. Once cooled, add the shredded almonds and most of the shredded pistachios, reserving a small amount for garnishing. Mix the nuts into the milk mixture evenly.
