ISLAMABAD: Bamboo biryani features perfectly cooked long-grained rice infused with authentic spices and your choice of meat, all enveloped in bamboo, delivering an explosion of flavors to your palate.
Ingredients:
500 g chicken
2 tbsp salt
1 tsp black pepper powder
1/2 tsp turmeric powder
1 tsp red chilli powder
1 tsp coriander powder
1/2 tsp cumin seeds
1 tsp biryani masala
2-inch pieces of ginger
10 garlic cloves
4 green chillies
Fresh coriander leaves
Fresh mint leaves
1/2 cup yogurt
2 cups basmati rice
4 tsp ghee or oil
Whole spices
Saffron water
Fried onions
Instructions:
Marinating the Chicken:
In a mixing bowl, combine the chicken with whole garam masala, salt, turmeric powder, red chili powder, biryani masala, ginger-garlic paste, coriander powder, fried onions, the juice of half a lemon, yogurt, mint leaves, coriander leaves, and oil. Mix well and let it marinate for an hour.
Marinating the Rice:
Place the raw basmati rice in a bowl.
Add oil, salt, whole garam masala, ginger-garlic paste, turmeric powder, red chili powder, biryani masala, onions, green chilies, and mint leaves. Mix thoroughly.
Set aside for an hour.
Assembling the Biryani:
Clean the bamboo thoroughly, ensuring no dust remains.
Grease the inside with oil.
Start layering by adding two spoonfuls of the chicken marinade, followed by 4 to 5 spoonfuls of rice. Repeat the layers.
Pour in 1 ¼ cups of water, allowing it to seep to the bottom.
Cover the bamboo with aluminum foil.
Cooking Bamboo Biryani:
Ignite a fire and place the bamboo over it.
Cook for 30 to 35 minutes, turning occasionally.
After cooking, remove it from the fire and let it rest for 5 to 10 minutes.
Serve hot on a banana leaf.
